Ingredients and Method:

• Pre-heat oven to 350 F/175 C, wash and clean mushrooms and break of their stems

• Finely chop the stems and fry them with 1 minced garlic clove in a pan over medium heat

• Remove the mixture from heat after the garlic starts browning a bit and set it aside to cool

• When cooled, add the mixture to 1 pack of cream cheese softened, along with ¼ cup of parmesan, ¼ tsp black pepper, ¼ tsp onion powder, ¼ tsp cayenne and mix; the mixture should be thick.

• Now spoon some of the cheese mixture to each mushroom cap and bake for 20 minutes and you have yourself a cheesy treat!

Spicy hummus? Yes please! The good old hummus has had a makeover and now it has bite to it. Not only does it taste good, it looks pretty too…

Method and Ingredients:

For the Hummus –

• Pre-heat an oven to 200 C/400 F; de-seed 2 large bell peppers and chop them into chunks

• Put these chunks on a baking tray, rub them with olive oil and roast for 25-30 minutes, till they start charring a bit on the edges

• De-seed (or don’t if you like it hot!) 1 red chili and chop it finely. Peel and crush 1 garlic clove, grate some lemon zest and squeeze some lemon juice

• Now add the red bell peppers, the red chili, the garlic, the lemon zest and juice along with 400g chickpeas, 2 tbsp olive oil, 2 tbsp tahini and some S & P and blend.

For the Pita Chips

• Spread 4 white pita breads with olive oil, garlic powder, paprika and S&P on it and bake for 15 minutes per side and voila!
